Ingredients

  • 2 individual packages Udon

  • Crispy Tempeh
  • 1 Block Plain Tempeh

  • 1 tbsp Avocado Oil

  • 1 tsp Garlic Powder

  • 1 tsp Chili Powder

  • 1 tbsp Dark Soy Sauce

  • Dan Dan Sauce
  • 3 tbsp Tahini

  • 2 tbsp Soy Sauce

  • 1 tbsp Dark Soy Sauce

  • 2 tbsp Brown Sugar

  • 4 Garlic Cloves – sliced thin

  • 1 tbsp Grated Ginger

  • 2 Green Onions Chopped

  • 4 tbsp + Water to thin

  • Lime Juice to Taste (add at the end)

  • Optional Toppings
  • Green Onions

  • Chili Crisp

  • Crushed Peanuts

Directions

  • Begin by pre-heating the oven to 400f
  • On a large baking sheet lined with parchment paper, crumble tempeh and add oil, soy and seasonings. Bake for 15 minutes or until the desired crispy texture is achieved.
  • In the mean time cook udon according to package instructions and make the sauce by incorporating all the sauce ingredients minus the lime juice.
  • Add the sauce to a hot deep dish pan and cook for a minute or two on medium-low before adding cooked udon and giving it a good toss in the sauce.
  • Remove tempeh from the oven.
  • Plate saucy udon and top with crumbled tempeh, lime juice more green onion, chili crisp and crushed peanuts and enjoy!
