These Vegan Air-Fryer Taquitos are made with seasoned black beans and squash for sweetness. Crisp to perfection in less than 15 minutes for a quick and healthy weekday meal.
I am going to be the first to say that these are NOT traditional taquitos, but they are DANNNG good, if I do say so myself. I replaced the traditional meat with a refried bean type filling and loaded it up with delicious vegan toppings. The filling has squash added to give it some sweetness to pair perfectly with the spicy and savory seasonings in this dish.
What I love about this recipe, is that it’s perfect for busy weeknights. Quickly roll the easy-to-make filling into a corn of flour tortilla and pop it into the air fryer for less than 15 minutes. Place the taquitos on a bed of lettuce with your favorite toppings for a complete and filling meal.

How to Make Vegan Air-Fryer Taquitos
The Filling:
Quickly make the filling by sautéing onion and garlic in a pot. Add the seasonings and some water before adding some frozen cubed squash and a can of black beans. Cook until the squash has softened. Finish it off by mashing it all up with a hand masher.
Roll them up!:
Use either store bough or homemade corn tortillas. Spread a spoonful of filling over the tortilla and roll it up tightly. Place in the rack of the air-fryer. Repeat for all of the tortillas, this recipe makes approximately 10-12 small taquitos.
Cook in the air-fryer at 400 degrees Fahrenheit for 10 minutes, flip and cook for an additional 2-3 minutes. If you would like them extra crispy and brown, brush with a small amount of oil before frying again.
Finish them off!:
Lay them out on a bed of lettuce with your favorite toppings and sauces.

Ingredients
10-12 small Corn or Flour Tortillas
1 small Yellow Onion
2 Garlic Cloves (minced)
1 can Black Beans (rinsed and drained)
3/4 cup cubed squash (fresh or frozen)
1/4 cup Vegetable Broth or Water
1/4 tsp Cumin
1/4 tsp Paprika
1/4-1/2 tsp Chipotle Powder
1 tbsp Maple Syrup (optional for extra sweetness)
Salt to Taste
Avocado Oil (for browning and sautéing)
Directions
- In a saucepan heat some oil on medium-high heat. Add onion and garlic and cook for 3 minutes or until translucent.
- Reduce heat to medium-low, add seasonings and cook for 30 seconds until fragrant.
- Add cubed squash, beans and water. Reduce heat to low and cover with a lid. Continue to cook until squash has softened.
- Remove from heat and mash with a hand masher or use an immersion blender until smooth.
- Spread a scoop of this mixture evenly on the surface of a tortilla. Roll the tortilla tightly and place in the basket of the air-fryer. Repeat until you run out of filling.
- Set Air-Fryer to 400 degrees Fahrenheit. Fry for 10 minutes, flip and brush with oil (optional) then cook for another 2-3 minutes or until the taquitos are nice and crispy.
- Serve immediately with your favorite ingredients and toppings (see great topping options in the paragraph above)
